Agrumato tangerine extra virgin olive oil.
Agrumato oils come from an ancient culinary tradition of the region of Abruzzo on the Adriatic Sea, east of Rome. For many years at the end of the harvest, olive farmers who owned a "frantoio" (olive oil mill) crushed small amounts of olives with lemons for use by their families and close friends.
 
Producing Agrumato oil is a labour-intensive and time-consuming process. Olives are harvested entirely by hand and citrus fruits are carefully picked at the perfect point of ripeness. The olive and citrus fruits are then crushed together in a traditional stone mill. The resulting paste is immediately pressed under low pressure and the juice is centrifuged, separating the water content from the oil.
Only oil from this first cold pressing is flavorful enough to produce this very rare and precious extra virgin olive oil; golden green with the aroma and flavor of Mediterranean citrus fruits.
 
Traditionally Agrumato was made by crushing lemons with olives. Since 1992, Ricci family has produced Agrumato Oils with Oranges, Citrons and Tangerines for new versions of this unique condiment. Agrumato Tangerine is unique on crustaceans or birds.
